The parsnip is an old vegetable, near to the carrot. Its white fleshy root is bigger and more nourishing. We consume it raw or cooked, in the vapor, in purée, in chips, to perfume the beef stew... Sowing from March to June, possible also in September in the South of France.
Attention: the parsnip can provoke dermatites of contact, aggravated by a sun exposure.
